Here's a new twist on a timeless favorite!
Ingredients:
8-9 medium size red potatoes (salted)
1 stalk of celery finely chopped
Salt and freshly ground pepper
1 small white onion finely chopped
2 boiled eggs, chopped
1 cup Dip Me Creole Herb Sour Cream Dip
¼ cup chopped green onions
¼ cup chopped parsley

Directions:
-Peel potatoes and chop into quarters. Rinse potatoes in a colander in order to get some of the starch off.
-Place potatoes in a large pot. Salt the water to taste and boil until tender. This will take approximately 10-12 minutes.
-Rinse potatoes off in colander to stop the cooking process. Then place them in a large bowl.
-Add chopped celery, onion, eggs, Dip Me Creole Herb Sour Cream Dip, salt and freshly ground pepper to taste.
-Garnish with chopped green onions and parsley.
